Livestock and Poultry Carcass Grading Regulations
53. The standards for a bison carcass of the grade Canada C1 or Canada C2 are the following:
(a) the maturity characteristics set out in Schedule II to this Part;
(b) muscling that ranges from medium to excellent; and
(c) a fat thickness at the measurement site that
(i) ranges from 1 mm to 4 mm, in the case of the grade Canada C1, or
(ii) is greater than 4 mm, in the case of the grade Canada C2.
